Pumpkin seeds will grow a central stem, that grows to max size before spawning a Pumpkin next to it.[1][2] The stem can be grown to full size with Bone Meal, and will spawn a pumpkin shortly thereafter. The seeds can be found in Abandoned Mine Shaft chests, but are much rarer than Melon Seeds.
Due to a bug, it may not be possible to find pumpkin seeds in 1.8.1.
