This guide is a simplified overview of all the changes in the Java Edition Alpha 1.0.x releases, which assumes at least some familiarity with Infdev releases.

Mobs

Snow Block		Ingredients Crafting recipe Snowball	Shovel	A building block only obtainable in winter mode.
Cactus		Generates on sand.	Any	Grows more cactus on top of itself. Damages entities that touch it.
Reeds		Generates on grass next to water.	Any	Grows more reeds on top of itself. Can be crafted into paper.
Clay Block		Ingredients Crafting recipe Clay Ball Generates in and around water.	Shovel	Drops clay.
Jukebox		Ingredients Crafting recipe Oak Planks + Diamond	Axe	Can play music discs.
Fence		Ingredients Crafting recipe Stick 2	Axe	Cannot be jumped over.

Clay		Drops from clay blocks.	Can be cooked into bricks or crafted into clay blocks.
Brick		Ingredients Smelting recipe Clay Ball + Any fuel	Used to craft brick blocks.
Slimeball		Drops from slimes.	Does not yet have a use.
Egg		Chickens will randomly lay eggs.	Does not yet have a use.
Music Disc		Found in dungeon chests.	Can be played in a jukebox.

Leather Armor		Now crafted with leather instead of wool. Renamed from "cloth" armor to "leather" armor.
Arrow		Now crafted with flint instead of iron ingot.
Wooden and Cobblestone Stairs		Inventory icon is now a (bugged) 3d model instead of a flat texture.
Wooden Door		Has a new inventory icon.
