Horse saddles are items that work just like regular saddles, but for horses instead of pigs. You have to tame a horse before putting a saddle on it by riding it and feeding it apples, wheat or sugar.
When Horse saddles are placed on a Donkey, a chest can be placed for on-the-go storage. Although, you can't access that chest.

A live fish can be captured by using a [[water bucket]] on a fish, to obtain a [[bucket of fish]], which is the only way to obtain the live mob in item form. Using the bucket of fish on a water source block transfers the fish from the bucket to the body of water. A water bucket may also be used on [[axolotl]]s in this manner.
